This recipe is great for using leftovers! You will need:
3-4 small yukon gold potatoes
2 cups cooked salmon (or a couple of cans)
some green onions, minced
20 basil leaves, shredded
garlic, minced
2 tsp soy sauce
2 tsp tabasco
1/2 cup breadcrumbs (i used smashed saltine crackers!)
1 egg
1. Cook potatoes: Simmer the peeled spuds until good and soft. Drain very well. Mash.
2. Flake salmon: Put salmon into a large mixing bowl and flake it up.
3. Add Potatoes and bread crumbs to the salmon
4.Season: Add the onions, basil,garlic, soy sauce and tabasco. Mix well.
5. Add egg: break an egg into the mix and mix it in.
6. Get yer hands in 'er: wet your hands and shape the mixture into patties 1/2 inch thick.
7. Cook 'em up! Fry the patties in a little extra-virgin till golden brown.
This should make about 8-10, depending on the size. I served this with a simple side salad.
